We’re celebrating the 20th anniversary of Gelatiamo! Founded by Maria Coassin in the heart of downtown Seattle, Gelatiamo is the art of perfect gelato and Italian pastries. Each of our recipes is skillfully developed by Maria following authentic Italian traditions, and inspired by her love of Seattle. Throughout this year we’ll feature stories, people, partners and milestones that have been a significant part of our history. Come, enjoy gelato with us!

Gaby, currently our gelato production manager, joined the Gelatiamo team in 2010 after a serendipitous moment: “I remember one specific night, before I started working at Gelatiamo, I was on my way home at night, riding the bus and I saw Gelatiamo through my window. Once I saw the building and did a little research, I knew it was my dream job to work in this beautiful place. I would say to myself ‘Someday, I will work at Gelatiamo,’ and, here I am today, grateful and proud to call Gelatiamo my place of work.”

IMG_0993On any given day, Gaby can be found in the kitchen, helping to prepare each day’s selection of pastries and gelato. Her favorite? “It’s difficult to decide on one single favorite recipe,” explains Gaby, “because I love to make everything! But, if I have to say one (or two), I’ll start with our signature panettone. Making panettone is a very delicate process that requires focus on the details of the recipe. I really feel honored to be trusted with such an old and traditional family recipe, such as Maria’s panettone.”

IMG_5691Gaby adds another favorite of hers is gelato, of course! “It’s hard work but fun and the kitchen team is always moving, blending one recipe after another. To make pastries and gelato, we need to put love and passion into each recipe,” describes Gaby. “I think that’s one of the main things that sets Gelatiamo apart.”

As Gaby became part of the team, she says Maria taught her the importance of tradizione and heritage in crafting Gelatiamo’s recipes. “Maria learned the traditions of baking and the cafe experience from her family, and she always finds the freshest ingredients to make our recipes. She sees the minute details and believes everything needs to be perfect and the highest quality for our customers. Maria is truly a perfectionist.”
